Coffee (Amazonía / Ecuador / Roast Level: Medium / Fresh Roast From Order Date)
CHF11.00 – CHF13.00Price range: CHF11.00 through CHF13.00
Description
- Intro: Exclusive organic coffee from the Amazon region in Ecuador, an area known for its rich biodiversity and ideal conditions for coffee cultivation. The combination of fertile soils, optimal altitude and a humid climate contributes to the development of coffee beans with a unique flavor profile. The “Medium” or “Full City” roast is ideal for espresso, French press, filter coffee or moka pot lovers. Thanks to the medium roast, the coffee retains its diverse aromas and some acidity and already shows the pleasant earthy characteristics, such as: chocolate flavor, nuts and light smoky notes. The coffee will be freshly roasted for you (hand-roasted) from the date of order.
- Origin: The coffee comes from the Amazon region of Morona Santiago in Ecuador. It grows at an altitude of 800-1,500 meters above sea level. Coffee from the Amazon region is characterized by a balanced aroma with notes of chocolate, nuts and exotic fruits. Ecuadorian coffee is known for its pronounced floral and fruity notes with a medium body.
- Coffee Type & Preparation Process: 100% Arabica (organic quality, without certification). Natural Process (dry processing): the whole coffee cherries are dried in the sun before the pulp is removed. This gives the coffee a fruity and full aroma with more complex flavor profiles.
- Roasting Level & Preparation: Medium degree of roasting, also known as “Full City”. Roasting is stopped after the “first crack” (first cracking of the beans) and directly before the “second crack” and cooled to room temperature within 5 minutes. The degree of roast is ideal for: Espresso machines, for the French press, filter coffees and the moka pot.
- Waiting Time, Shelf Life & Storage: The coffee should be left to rest for 1 week before use. Freshly roasted coffee contains CO₂, which must first escape (via the valve in the packaging supplied). CO₂ behaves like a protective film and prevents optimum extraction. After a week, the coffee can then be drunk within 1.5 months. The coffee tastes best during this time. We recommend storing the coffee in the bag provided in a cool, dry place (not in the fridge). Of course, the best-before date extends far beyond 1.5 months and the coffee is still edible..
- Fair Trade: Way back to you trades directly with Fundación ATASIM and pays it a fair price (fair trade), which enables it to establish itself sustainably. Direct trade avoids unnecessary price increases by middlemen. Fundación ATASIM is committed to sustainable development and improving the living conditions of disadvantaged communities in the Amazon and Andean region of Ecuador. By buying this coffee, you are not only supporting sustainable coffee cultivation, but also the economic development of the region.
- Sustainability: The coffee is cultivated in organic quality. Due to the relatively high costs involved, the cooperative has not yet obtained official certification (organic label).
- Sustainable Impact: Way back to you visited the Fundación ATASIM on site and gained an impression of sustainable production. The cooperative ensures the economic and social development of the communities in the region. Thanks to a fair trade pricing policy, it is able to operate sustainable coffee cultivation. ATASIM supports local coffee farmers by introducing environmentally friendly cultivation methods. The aim is to improve the living conditions of producers and protect the environment at the same time. Fundación ATASIM is also committed to increasing the participation of women in society in order to enable them to shape their lives in a more self-determined way. Way back to you is pleased to be able to make an indirect contribution here and is happy to accept the higher price of green coffee.
Flavor analysis: Thanks to the medium roast, the coffee retains its diverse aromas and slight acidity. In addition, earthy characteristics such as chocolate flavor, nuts and light smoky notes emerge. Interesting bitter notes are reminiscent of almonds and marzipan. The fruity aromas of limes, apricots, blueberries and vanilla persist in this medium roast. A slight sweetness of sugar cane and ripe mango round off the taste. The balanced body of the coffee comes into its own when making espresso.
